I saw this idea in a cookbook or magazine, and I thought it was perfect when you are low on patience and time (and I am going to be honest is quite a lot sometimes) you can still have the fun of decorating a house without having to build it.
Day 2 of Christmas Goodies
3 cups all purpose flour
1/2 tsp. baking soda
1/4 tsp baking powder
1/2 cup softened butter
1/2 cup brown sugar
2 tsp ground ginger
2 tsp ground cinnamon
3/4 tsp ground cloves
1/2 tsp black pepper
3/4 tsp salt
3/4 cup molasses
heat oven to 375F
In a large bowl sift together flour, baking soda and baking powder and set aside
In an electric mixer cream butter and sugar, mix in spices, salt and pepper. Beat in the egg and molasses.
Add remaining ingredients and thoroughly combine until the mixture forms a thick dough.
Place on a floured work surface. Roll out.
Bake for 15 minutes or until gingerbread is firm in the center, but not dark around the edges (dough will harden as it cools)

Next time I might use a pattern so it actually looks even :)
