Just in case you don't know every Wednesday I try to post something I call Waste Not ~ Wednesday.
I heard the quote "the only thing we throw out is old lettuce" and this is something I have been trying to do. Not to waste food but to find new and interesting ways to use them.
Baked Potatoes are like a blank canvas for pretty much anything. First off how to cook the potato. I usually poke it with a fork and wrap it in foil and bake for around an hour or two depending on the size of the potato. But today I did not have any foil and I read somewhere about rubbing the potato with some olive oil and then baking it in a pan.... man oh man I will never go back to the foil way again. The potato was super fluffy and the skin was nice and a little crispy it was SOO GOOD!!! Now on to the toppings. Here is a few ideas on how to top your potato:
~Sour Cream and Chives
~Chili or Stew
~Taco Potato (taco meat and cheese with some salsa)
~Spinach Artichoke dip
~Pizza Potato (little sauce, mozzarella Cheese, pepperoni)
~BBQ Beef or Chicken
~Bacon and Eggs
Really the possibilities are endless
My favorite idea I found was to have a leftover night and pull out all the things you had leftover for that week... a little chicken here, some veggies, some cheese and then have your family top it however they like. It is a great way to eat up all those leftovers that really can't be made into another meal. This is what we did tonight, we had our baked potatoes with some ham we had in our freezer leftover from Christmas. They also had some broccoli and caramelized onions. It was a great meal and perfect for this cold weather we are having.
